Ingredients

  • 4 bagels
  • 8 slices bacon
  • 8 eggs
  • ½ cup milk
  • 1 tablespoon butter
  • 1 teaspoon chopped chives
  • 4 slices American cheese

Instructions

  • Cook the bacon until crispy in a frying pan over medium heat. Remove the bacon strips from the skillet, and set them to the side. Cover them up to keep them warm if you prefer.
  • Crack the eggs into the same skillet, and add milk, butter, and optionally finely chopped chives. Use a spatula to break up the eggs, and combine the ingredients in the pan while they cook on medium heat. The scramble is done when the eggs are almost completely dry.
  • Assemble by placing the scrambled eggs, bacon, and cheese in a freshly toasted bagel. Serve immediately, while it's still warm.

Notes

  • Store any leftover bagels in a refrigerator for up to a day. The bagels taste best when served immediately!
  • Feel free to add any toppings that you like, such as sauces, condiments, tomatoes, hot sauce, lettuce, pickles, or onions.
  • You can use your favorite cooking method to prepare the eggs and bacon. For example, you can cook bacon in your air fryer, or make scrambled eggs in an oven or microwave if that's more convenient to you.
