Spicy Sausage Pasta

- 300 g pasta
- 6 spicy pork sausages
- 1 can diced tomatoes (14 oz/400 ml)
- 1 chili
- 2 garlic cloves
- 1 red onion
- 2 peppers
- 1 teaspoon paprika
- pinch of salt
Boil pasta according to the package instructions.
Meanwhile, heat the vegetable oil or cooking spray in a large pot on medium heat. Remove the casings from the sausages, and add them to the pot. Use a spoon or spatula or mash the sausages until it has the consistency of ground meat.
Add finely diced chili and garlic. Allow it to saute for a few minutes until the sausage has cooked through.
Add canned diced tomatoes, paprika powder and salt and leave the sauce to simmer for 4-5 minutes.
Finally, add thinly sliced peppers and red onions. Stir them into the sauce and leave it to simmer for a few more minutes until the vegetables have softened.
Optionally add chili powder to taste to make the dish more spicy.
Drain off the excess pata water. Combine the pasta with the sauce and serve.

Can I add more vegetables? – You can add any vegetables you like. Try adding mushrooms, cauliflower, sweet potatoes, cherry tomatoes, olives, spinach or kale.

Leftover pasta with sausage and peppers can be stored in the fridge for up to 4 days, or frozen for up to 3 months.
Reheat the leftovers in the microwave and serve them hot.

Here is how you get this recipe perfect:
- Use your favorite pasta. I prefer to make this dish with a short type of pasta, like fusilli or penne.
- Use a sausage you love. I use spicy pork sausage, but chicken sausage will work as well. Buy ground sausage, or remove the casings from the sausages before cooking them.
- Add chili powder to taste towards the end of the cooking time. With no chili powder added, the pasta dish has a hint of spice, but is still kid friendly.
