Broccoli salad with raisins and bacon
Any salad with bacon is a winner in my book, and broccoli salad with raisins and bacon is no exception. This wholesome and filling salad is the perfect combination of salty, sweet and crunchy. This is the salad for those who don’t like salad. Serve it as an easy main course, or as a side dish.

- 1 medium broccoli
- 6 radishes
- 4 slices of streaky bacon
- 40 g raisins
- 2-3 tablespoon light mayonnaise or Greek yogurt
- black pepper
Dice the bacon slices and cook in in a pan on medium heat until they have browned and gone crispy. Discard the bacon grease and leave the bacon bits to slightly cool for a minute.
Finely chop the florets of a medium broccoli. Raw broccoli can be a bit tough, but if the pieces are small, it actually tastes really nice.
Thinly slice the radishes. Add all the ingredients to a salad bowl, and stir to combine. Season with freshly ground black pepper.
Total calories for the entire salad if eaten as a main is 410. As a side dish for 3 people, it is 140 calories per serving.
Broccoli salad leftovers
Leftovers can be stored in the fridge for up to 3 days in an airtight container. This dish is not suitable for freezing. You can also prepare parts of this dish ahead of time. Chop the broccoli and combine with the mayo, raisins and radishes up to a day before serving. Then, cook the bacon and add right before serving. This way the bacon will be perfectly crispy.
