Puff Pastry Apple Pie
A flaky puff pastry apple pie is perfect as a quick snack or dessert. These serving sized hand pies are made by covering a delicious caramel apple pie filling with crispy puff pastry. A fantastic dessert for fall, and great in the lunch box too!

- 4 large apples (Granny Smith)
- 2 tablespoons brown sugar
- 2 tablespoons butter
- 2 sheets puff pastry
- 1 teaspoon cinnamon
- 1 teaspoon cornstarch
- 1 teaspoon water
Pre heat your oven to 425 F / 220 C / 200 C fan oven.
Peel the apples, and remove the cores. Dice into small bite sized pieces.

Add the apples to a small pot along with the butter, cinnamon and brown sugar. Warm it up over medium heat. The sugar and butter will melt to form a sauce. Allow the apples to simmer until they are soft, around 3-5 minutes, stirring occasionally.

Combine cornstarch with cold water in a small bowl to form a cornstarch slurry. Add this to the apples, and stir. This will allow the sauce to thicken quickly.

Cut pre-rolled puff pastry sheets into 4 equally sized rectangles. Using two sheets, you should have 8 rectangles in total.

Add a spoonful of the apple filling onto each of the 8 puff pastry rectangles. Try to place the filling slightly off center to make it easier to close up the pies after.
Fold the pastry over the filling to form an envelope shape on each of the pies. Use the prongs of a fork to press down the sides of the pies to seal the edges. Slice three cuts in each pie with a sharp knife.
Crack the egg into a small bowl, and whisk it quickly with a fork or small whisk to make an easy egg wash. Use a pastry brush to brush a thin layer of egg over the apple pastries.
Place the pies on a baking sheet or sheet pan covered with parchment paper.
Bake them for about 20 minutes, or until the pastry puffs up and develops a lovely golden brown color.
- Store in a sealed container at room temperature for up to 3 days, or freeze for up to 3 months.
- Keep an eye on the pies, as the cooking time can vary.
- Make sure to use chilled pastry, and bake it in a preheated oven for the best results.
- Use any apples that you like. Granny Smith or Gala apples are ideal for this recipe.
