Equipment

  • Skillet

Ingredients

  • 8 ounces halloumi cheese
  • 4 flour tortillas
  • 3 cups spinach
  • 4 tomatoes
  • 1 cucumber
  • 1 red onion
  • 4 tablespoons tzatziki

Instructions

  • Slice the halloumi cheese into ¼-inch thick pieces.
  • Pan sear the halloumi on medium to high heat until the slices are golden on both sides.
  • Warm your tortillas, either in an oven, microwave or frying pan or skillet. They are much easier to wrap when warm.
  • Assemble the wraps by placing sliced halloumi, tzatziki and your vegetables in the middle of the wrap. Wrap them together by tucking in the sides, and tightly rolling the filling together.

Notes

  • Store the wraps in a sealed container in a refrigerator for up to a day. If you want to keep them for longer, I recommend storing the ingredients separately to prevent the wraps from becoming soggy.
  • Feel free to use any vegetables that you like.
  • For a gluten free version, make sure to use gluten free tortilla wraps.
