Chicken Rogan Josh

  • Finely dice the onion, garlic and ginger. Dice chicken against the grain into bite sized chunks.
  • Heat up the olive oil in medium to high heat in a skillet or pot. Add diced onion, ginger and garlic, and sauté for a few minutes, or until the onion is soft and translucent.
  • Add tomato paste and seasoning to the pot. Sauté for another minute to allow the flavors to develop.
  • Then, add the diced chicken and water. Stir to combine the ingredients, and reduce the temperature to medium.
  • Optionally cover the pot with a lid, and leave the curry to simmer for 10-20 minutes, or until the chicken has cooked through. The exact cooking time will vary depending on the size of the chicken chunks.

  • Store leftover chicken rogan josh in a refrigerator for up to 3 days. Reheat in a pot on the stove top, or in a microwave.
