Finely dice the onion, garlic and ginger. Dice chicken against the grain into bite sized chunks.
Heat up the olive oil in medium to high heat in a skillet or pot. Add diced onion, ginger and garlic, and sauté for a few minutes, or until the onion is soft and translucent.
Add tomato paste and seasoning to the pot. Sauté for another minute to allow the flavors to develop.
Then, add the diced chicken and water. Stir to combine the ingredients, and reduce the temperature to medium.
Optionally cover the pot with a lid, and leave the curry to simmer for 10-20 minutes, or until the chicken has cooked through. The exact cooking time will vary depending on the size of the chicken chunks.
- Store leftover chicken rogan josh in a refrigerator for up to 3 days. Reheat in a pot on the stove top, or in a microwave.
