Slow Cooker Bolognese

This easy slow cooker bolognese is a tasty and healthy spaghetti sauce, perfect for simple weeknight dinners. With ground beef and vegetables, it's really filling and satisfying. You can even make a big batch and freeze it down for later!

Ingredients

  • 1 pound ground beef
  • 2 cups tomato sauce (UK: tomato passata)
  • 2 carrots
  • 1 celery stick
  • 1 onion
  • 3 garlic cloves
  • 1 teaspoon olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried basil
  • ½ teaspoon dried parsley
  • 1 teaspoon Italian seasoning

Instructions

  • Warm up the olive oil in a skillet on medium heat. Add the ground beef, and cook until the beef has browned completely. Then, transfer the beef to the slow cooker.
  • Add finely diced celery, carrots, onion and garlic to the skillet, and sauté for a few minutes until the onion is soft and translucent. Move the vegetables to the slow cooker.
  • Finally, add the tomato paste, tomato sauce and seasoning to your slow cooker.
  • Give everything a stir, and cook on HIGH for 3-4 hours, or LOW for 6-8 hours.
  • Serve the bolognese over boiled pasta.

Notes

  • Store the leftover bolognese in a refrigerator for up to 4 days, or freeze for up to 6 months.
  • Hidden vegetables: To hide the veggies in the sauce, you can puree diced carrots, celery and onions in a food processor or blender before adding them to the slow cooker. The bolognese will then get the same nice flavor, without any chunks of veg mixed in.
