Lime Popsicles

- 2 cups water
- ½ cup honey
- ½ cup lime juice (6 limes)
Combine boiling water, lime juice and honey in a mixing bowl or measuring jug.
Allow the liquid to cool down, then pour it into popsicle molds. This should give 8-10 popsicles, depending on the size of your molds.
Freeze the popsicles until they are completely set. This usually takes at least 4-6 hours.
- Store frozen lime ice pops for up to 8 months.
- Add extra lime juice or lime zest to enhance the lime flavor.
- Vegan popsicles: Replace the honey with sugar or agave nectar.
