Slow Cooker Sausage Casserole

This healthy slow cooker sausage casserole is a popular family favorite. A simple, delicious dinner that you can make in your Crockpot for convenience.

Ingredients

  • 6 pork sausages
  • 1 (15 oz) can diced tomatoes
  • 1 teaspoon Worcestershire sauce
  • 1 (15 oz) can butter beans
  • 2 carrots
  • 1 celery
  • 1 onion
  • 3 garlic cloves
  • 1 red pepper
  • 1 leek
  • 1 teaspoon thyme
  • ½ teaspoon oregano
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • Add vegetable oil to a skillet or frying pan, and sear the sausages for a few minutes on each side, until they have gently browned. Transfer them to the slow cooker.
  • Add finely diced onion, grated garlic, and diced carrots, celery, leek and red pepper to the skillet. Saute for a few minutes until the onion is soft. Transfer the vegetables to the slow cooker.
  • Add the canned diced tomatoes, Worcestershire sauce, thyme, oregano, paprika, salt and pepper to the slow cooker. Cook on HIGH for 3 hours, or on LOW for 6 hours.
  • Drain and rinse the butter beans, and add them to the slow cooker. Slow cook for another 15 minutes.
  • Serve the sausage casserole with your favorite side dishes.

Notes

  • Store leftover sausage casserole in a refrigerator for up to 3 days, or freeze for up to 6 months. The flavor of this casserole only improves over time!
