Slow Cooker Sausage Casserole

- 6 pork sausages
- 1 (15 oz) can diced tomatoes
- 1 teaspoon Worcestershire sauce
- 1 (15 oz) can butter beans
- 2 carrots
- 1 celery
- 1 onion
- 3 garlic cloves
- 1 red pepper
- 1 leek
- 1 teaspoon thyme
- ½ teaspoon oregano
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
Add vegetable oil to a skillet or frying pan, and sear the sausages for a few minutes on each side, until they have gently browned. Transfer them to the slow cooker.
Add finely diced onion, grated garlic, and diced carrots, celery, leek and red pepper to the skillet. Saute for a few minutes until the onion is soft. Transfer the vegetables to the slow cooker.
Add the canned diced tomatoes, Worcestershire sauce, thyme, oregano, paprika, salt and pepper to the slow cooker. Cook on HIGH for 3 hours, or on LOW for 6 hours.
Drain and rinse the butter beans, and add them to the slow cooker. Slow cook for another 15 minutes.
Serve the sausage casserole with your favorite side dishes.
- Store leftover sausage casserole in a refrigerator for up to 3 days, or freeze for up to 6 months. The flavor of this casserole only improves over time!
