Ingredients

  • 4 chicken breasts
  • 2 pounds potatoes
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1 teaspoon parsley
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 cup chicken broth
  • 1 tablespoon olive oil

Instructions

  • Half or quarter large potatoes into similar sizes. If you are using baby potatoes, they can be cooked whole.
  • Add chicken, potatoes, seasoning and oil to a mixing bowl, and stir to coat the chicken and potatoes evenly.
  • Pour the chicken broth into an instant pot. Add the chicken to the broth, and place the potatoes on top of the chicken.
  • Turn the valve to sealing, and put the instant pot on PRESSURE COOK or MANUAL setting for 15 minutes.
  • After the instant pot has finished cooking, leave the pressure to naturally release for 5 minutes before turning the valve to do a quick release of the remaining steam. Be careful, as the steam is very hot!
