Ingredients

  • ½ cup black olives
  • ½ cup green olives
  • 15 cherry tomatoes
  • ½ red onion
  • 1 handful fresh herbs
  • ½ cup diced feta cheese

Instructions

  • Add olives, diced feta cheese, sliced red onion, halved cherry tomatoes and chopped herbs to a bowl. Stir to combine the ingredients.
  • You can adjust the amount of each ingredient, such as adding more herbs or tomatoes, until the salad is just how you like it. You can also add a vinaigrette or salad dressing if you prefer.
  • Serve it immediately, or store it in a refrigerator until it’s ready to serve.

Notes

  • I like to dice the feta cheese rather than crumble it. It simply looks a little more appetizing on the plate!
  • Feel free to omit, add or substitute any ingredients as you please. Salads are very versatile and really easy to adapt to your preferences.
  • You can add a salad dressing or vinaigrette if you want, although the salad tastes great without.
  • Leftover olive salad can be stored in a sealed container in a refrigerator for up to 3 days.
