Chicken and Cabbage Stir Fry
Chicken and cabbage is a light, lean main course that makes an excellent quick dinner. This low calorie meal is made in less than 15 minutes, and only requires a handful ingredients.

First, prepare your ingredients. Finely dice or grate the garlic, slice the onion and shred the cabbage. Dice the chicken breast fillets into small pieces or chunks.
Heat the vegetable oil in a large wok or skillet on high heat. Add the garlic and onion and stir fry for a minute until the onions starts to soften.
Then, add the chicken. Stir fry for a few minutes until the chicken is mostly white all over and almost cooked.
Add the shredded cabbage, and allow it to cook for 3-5 minutes, or until the cabbage has softened. The chicken will also finish cooking within this time. Stir through some soy sauce, then serve!
Which sauces can go with this recipe? – You don’t have to serve this stir fry with a sauce, but if you wish you can add some sriracha, sweet chili sauce, teriyaki, hoisin or black bean stir fry sauce.
Can I use other cuts of chicken? – Stir fries have to be made using boneless chicken. Feel free to use boneless chicken thighs if you prefer.
Can I use other types of cabbage? – I prefer to use white cabbage in this recipe, but you can also use red cabbage or even napa cabbage (Chinese lettuce).
Is this recipe allergy friendly and suitable for my diet? – This recipe is egg free, dairy free and nut free. Make sure to use a gluten free soy sauce if needed. It is also suitable for most diets, including whole30, paleo, keto, weight watchers and slimming world.
Leftovers
Leftover stir fry can be stored in an airtight container in the fridge for up to 3 days. This version is also excellent for freezing, and can be frozen for up to 3 months.
Thaw frozen leftover stir fry in the fridge overnight, before reheating it in a wok or the microwave.
