Zucchini noodles with shrimp

Zucchini noodles with shrimp is an easy and quick dinner recipe. We cook the shrimp and noodles in the same pan, making washing up a lot easier. This recipe is flavourful and low carb, making it a great weeknight dinner choice.

Ingredients

  • 2 zucchinis UK: courgettes, alternatively 300 g zucchini noodles
  • 160 g shrimp
  • 1 teaspoon cajun seasoning
  • 1 teaspoon olive oil

Instructions

  • Use premade zucchini noodles, or use a spiralizer to make your own noodles from 2 medium zucchinis.
  • Heat the olive oil in a pan, and add the shrimp. Drizzle cajun seasoning over the shrimp, and stir to coat them evenly. Allow the shrimp to cook for about 2 minutes, then push them to one half of the pan.
  • On the other half of the same pan, add the zucchini noodles. Allow them to cook until they have warmed through, about 2 minutes, then serve the noodles topped with the shrimp.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. Reheat leftovers in the microwave until piping hot throughout.

Try different flavours

We use cajun seasoning for this recipe. Cajun shrimp is really delicious, and the flavours suit this dish nicely. If you want to change it up, or you’re not a fan of cajun seasoning, you can try the following alternatives:
  • Garlic and lemon: Saute a finely minced garlic before adding the shrimp, and squeeze the juice of half a lemon on top.
  • Garlic butter: Replace the olive oil with 1 tablespoon butter, and saute a finely minced garlic clove before adding the shrimp.
  • Spicy shrimp: Replace the cajun seasoning with cayenne pepper.
  • Salt and pepper shrimp: Use freshly ground pepper and sea salt.
