Chicken and Broccoli Stir Fry

This chicken and broccoli stir fry is perfect for a quick, healthy weeknight dinner. With juicy chicken, sauteed broccoli and a delicious sauce, it’s a tasty meal that the whole family will enjoy.

Ingredients

  • 4 chicken breast fillets
  • 2 broccoli
  • 1 red onion
  • 2 garlic cloves

Sauce

  • 3 tablespoon olive oil or other cooking oil
  • 3 tablespoon dark soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey

Instructions

  • Stir frying goes really fast, so you will want to prepare the ingredients before you start.
  • Combine all the ingredients for the sauce in a bowl, and set it to the side.
  • Finely grate the garlic, slice the red onion, and chop the broccoli into bite sized florets. Dice the chicken into similar sized pieces.
  • Add some vegetable or olive oil to a skillet or wok on high heat. Allow it to warm up properly. Then, add diced chicken fillets, and stir fry until the chicken is cooked through, about 5 minutes. Remove the chicken from the pan, and leave it on the side.
  • Add the broccoli florets and grated garlic to the wok. Stir fry until the broccoli has mostly cooked through, about 3-5 minutes. Then add the chicken back, along with the sauce and sliced red onions.
  • Stir fry for another minute, and serve.

Notes

Can I use frozen broccoli? – I would not recommend it. Frozen broccoli contains much more water than fresh broccoli, and will have a softer texture when sauteed. If you choose to use the frozen broccoli, you will want to remove the water from the skillet as you’re cooking.
Can I use frozen chicken? – Thaw frozen chicken before use. I suggest thawing it in a refrigerator overnight before you need to use it.

Leftovers

Leftover chicken and broccoli stores well. You can store the stir fry by itself, or in portioned out meal prep containers with rice or other side dishes. I recommend reheating them before serving!
Storing: Store the leftovers in airtight containers in a refrigerator for up to 3 days.
Freezing: You can freeze chicken and broccoli stir fry for up to 3 months. Thaw it in a fridge overnight before using it.
Reheating: The leftovers are best served warm! Reheat them in a microwave for a few minutes, or in a skillet.
Make ahead: These leftovers are perfect as a healthy meal prep option! You can store the stir fry by itself, or in containers with rice or other side dishes. Pull the prepared meal out of the fridge, and reheat it quickly for quick and easy dinners or lunches.
