Healthy one pot turkey chili

This healthy and easy one pot turkey chili is packed with lean protein and delicious flavors, all combined in one warming stew.

Ingredients

  • 500 g ground turkey (1 lbs)
  • 1 onion
  • 3 garlic cloves
  • 1 red chili
  • 1 red pepper
  • 1 can kidney beans (400 g / 14 oz)
  • 1 can diced tomatoes (400 g / 14 oz)
  • 2 teaspoon cumin
  • 2 teaspoon paprika
  • salt, pepper

Instructions

  • Heat some vegetable oil, butter or cooking spray in a large pot.
  • Add finely diced onion, garlic and chili, and saute for a few minutes.
  • When the onions soften and start looking translucent, add the ground turkey. Cook while stirring until the meat has cooked through, 5-6 minutes.
  • Add the cumin and paprika to the ground turkey, and allow it to cook for 1-2 minutes.
  • Then, add drained and rinsed kidney beans, tomato passata, diced tomatoes, and a diced red pepper.
  • Leave the chili to cook for 10-40 minutes, stirring occasionally. The longer you cook it, the more flavor it will develop. Yum!

Notes

  • Got Thanksgiving leftovers? Try substitute leftover shredded turkey for the ground turkey.
  • This recipe makes a mild chili. If you want more spice, add 1-2 teaspoon chili powder along with the other spices.
  • This chili is ready to eat after about 25 minutes. However, I recommend leaving it to cook for 20-30 minutes extra for the flavors to really develop.

Can I add or remove any ingredients? – Absolutely. Omit any ingredients you don’t like, or add any want to include.
Can I make this vegetarian? – Yes. Substitute the ground turkey with quinoa for a hearty vegetarian chili.

Leftovers

Leftover turkey chili can be stored in an airtight container in the fridge for up to 4 days. This recipe is also perfect for freezing, and can be frozen for up to 3 months.
Reheat the leftovers in the microwave or on the stove top until hot before serving.
