- 1 avocado
- Squeeze of half a small lemon
- 1 tomato
- ½ red onion
- ½ teaspoon coriander
- salt, pepper to taste
Chop the tomato and red onion
Put it all in a food processor and mix until you have the perfect consistency. The longer you leave it, the smoother it will be. Around 20-30 seconds should provide the perfect amount of chunks
Store leftovers in an airtight container in the fridge for up to 2 days. The guacamole might get slightly browned, but will still be fine to eat.
How to freeze
Add the guacamole to freezer bags or airtight containers and freeze it for up to 3 months. Thaw frozen guacamole in the fridge overnight before serving it. Keep in mind that avocado tends to brown easily, and that thawed guacamole might be a bit off colour.
