Quinoa spinach feta tomato salad
Delicious and healthy quinoa salad with spinach, feta cheese and tomatoes. This recipe provides two servings, so share it with a loved one, or save half for tomorrow!

- 100 g quinoa
- 200 ml water
- spinach
- 2 tomatoes
- 100 g feta
Optional
- 2 tablespoon flaked almonds
- 2 teaspoon extra virgin olive oil
Rinse 100 g quinoa thoroughly in a fine mesh sieve, then add to a pot along with about 200 ml water. Cook following package instruction, typically for 15-20 minutes until softened.
Add spinach to a bowl. Top with cooked quinoa, diced tomatoes and crumbled feta cheese.
Optionally, add flaked almonds and drizzle with a little extra virgin olive oil.
This recipe does not include a salad dressing, as the tomato and feta cheese gives it enough moisture for my preference. Optionally, you could serve with a vinaigrette, lemon juice, or your favorite dressing.
Make it vegan
For a dairy free and vegan option, remove the feta cheese. Feel free to add any other ingredients of your liking!
