Watermelon and feta salad with basil

Few things are better than fresh watermelon in summer. Most of the time I stick to plain watermelon slices, it’s just so refreshing and tasty on its own. But as far as my main meals go, watermelon is usually out of the picture. And to be honest, this recipe does sound a bit weird; watermelon and feta cheese don’t necessarily sound like a good match, but trust me on this – they are. This watermelon and feta salad with basil is the perfect easy lunch for a hot summer day, or a great side dish for your bbq.

Watermelon salad, with protein and flavor and just enough ingredients for you to call it a meal. Honestly, if you’re in the middle of a sweaty summer heatwave and can’t be bothered to cook, this salad will be your best friend. I have even made it without the cheese, just simple watermelon with herbs, as a tasty and refreshing breakfast.

So refreshing, so tasty, so ridiculously easy to put together. Perfection.

How do you add watermelon to your dinner?

Watermelon, with its sweetness and freshness, it absolutely perfect for a quick salad, and works really well as a refreshing side dish. In this recipe I have simply added some fresh herbs and feta cheese, but you could of course incorporate more fruits or veg for a more filling salad. We all agree that watermelon is great, and it definitely deserves a spot at your dinner table.

  • 1/2 watermelon
  • 1 handful fresh mint
  • 1 handful fresh basil
  • 100 g feta cheese

  • Dice watermelon and add to serving bowl
  • Finely chop basil and mint, and add to the melon
  • With your hands, crumble desired amount of feta cheese on top
  • Mix the ingredients together and serve

This recipe is easily adapted to your preferences. Note that this salad is best served immediately, or after chilling in the fridge for up to a few hours.

Do not substitute for dried herbs. If you don't have basil or mint, you can make this dish without them. After all, diced watermelon tastes great on its own!

Dairy free:

Make the dish vegan and dairy free by either leaving out the feta cheese, or finding a vegan feta option.

Adapt to more servings:

If you want to make more of this salad for a larger group, start by dicing the desired amount of watermelon. Then, mix in the herbs and the feta cheese. This way you can control the ratio of the ingredients and get the result you want.

Try other ingredients:

Try adding cucumber, olives and red onion for a Mediterranean twist, or add strawberries and blueberries for more colors. Adding a bit of lemon juice or a vinaigrette is a great way to add flavour.
